Baked Egg-in-an-Avocado Salad
I try to incorporate nutritious foods into all of my meals. What's more nutritious than a salad? Not many things. I love salads, but your typical 'ole salad with a big pile of greens really bores the heck out of me. So I like to try new ways to spice them up and make them a bit more tasty.
I love bacon.... a lot. I've recently started eating turkey bacon because I know it's much healthier than "regular" bacon, but honestly either of them will do the trick me. Anyways, you seriously can't go wrong adding ANY kind of bacon to ANY kind of meal.
I also love eggs - hard boiled, scrambled, poached, fried - I love it all. And if you don't like avocado, well then something is seriously wrong with you. I know the texture is a bit weird to some people and that kinda throws them off a bit, but they are just so, so delectable!
SO BING, BANG, BOOM, ABRACADABRA! Add them all together to make a baked egg-in-an-avoacdo salad and well, you seriously have yourself one hell of a salad. Say goodbye to your boring, nothing-but-greens salads because you'll never want to go back once you try this wickedly awesome creation.
What you'll need:
- 1/2 ripe avocado
- 1 egg
- 2 large handfuls of spinach
- 1/2 of a whole cucumber
- 1 slice of turkey bacon
Directions:
First things first, preheat your oven to 425 degrees.
Slice your avocado in half and remove the pit. Next, carve some of the inside out so you have a hole large enough for 1 egg to fit inside of (don’t waste the scraps - you can add them on top of your finished product)!
Crack 1 egg inside of the avocado half. The avocado I used was a bit small, so I cracked the eggs inside of a bowl first. This way I could first place the yolk inside of the avocado, then add the egg whites on top to avoid messiness.
Line a small pan with aluminum foil and bake for 15 minutes.
Once finished baking, sprinkle with chives, turkey bacon bits, and pepper - or any toppings of your choice!
Add your baked egg avocado creation on top of fresh spinach, add cucumbers and whatever other salad ingredients you may like (cherry tomatoes, etc.), and enjoy!
