Loaded Shrimp Tacos
I honestly could probably never get tired of Mexican food. I love everything about it! First off, I loveee cheese and could seriously eat it with anything. ALL leftovers taste better with cheese. So yeah, you can already guess that I love quesadillas, tacos, burritos, fajitas, and all'a that jazz!
My favorite Mexican restaurant hands down is Plaza Azteca. God certainly took his time making that place and I thank my lucky stars that he did. If you've never been or never tried any of their food, like, I don't even know what you're doing with your life. Certainly not living, that's for sure. They have the best homemade guacamole around and their queso dip... wooooweee baby!
I like to try new things at restaurants, but I also have a habit of just getting "the usual" and the usual for me at Plaza is "Burritos Fajitas." Seriosuly. So. Bomb. They're steak fajitas (but in burrito form - hint hint from the name) topped with lotssss of melted cheese (told ya I love cheese), sour cream, and grilled onions.
I have a habit of rambling and getting way off topic - sorry guys ;) So now for MY Mexican dish that's not only super duper yummy, but HEALTHY too! Score!
What you'll need:
- 1 whole wheat tortilla
- 5 large pieces of shrimp (cooked, peeled, and deveined)
- 1 whole avocado
- Lettuce
- Cabbage
- Tomatoes
- Cucumbers
- Cilantro
- Juice from 1/2 lime
Directions:
So they only real cooking required for this meal is cooking the shrimp. Grill your little shrimpies on a stovetop and add your favorite seasonings (I use salt, pepper, chili powder, and a teeny tiny bit of onion powder). Next is the easy part - preparing your fruits/veggies. Don't forget to wash your produce!! I always triple wash mine jusssst to be safe. Chop up your cabbage, tomato, cucumber, avocado, and cilantro.
I like mine a little crispy, so I'll turn my oven burner on medium heat and place the tortilla in a pan to toast for a second, then flip it and do the same to the other side. Now for the fun part, which of course is getting to pile up everythingggg on your tortilla. Once you've done so (refer to the photos for how I do mine), squeeze a little bit of fresh lime juice on top and get ready for your life to change.
I love you Plaza, but you can't beat my loaded shrimp tacos. Sorry ;)
