Poached Egg and Avocado Sandwich
What's my favorite meal of the day? Breakfast of course! There's nothing more satisfying then waking up in the morning and starting off the day with a delicious, fully-filling meal. I know that having a hearty breakfast every day can be difficult to keep up with - taking into consideration not having enough time, rushing to get out the door, or simply just being too sleepy! BUT, this sandwich just might be your new fix!
This sandwich is easy to make, outrageously nutritious, and will have your tastebuds doing cartwheels after just one bite.
What you'll need (yields one VERY FILLING serving):
- 3-5 asparagus spears
- 2 eggs
- 2 slices of whole grain bread
- 1 avocado
- 1 tomato
- 1/2 lemon
- Salt (to taste)
- Pepper (to taste)
- Basil (to taste)
Directions:
Steaming your asparagus - bring a few cups of water to a boil in a large pot. Cut the dry ends off of your asparagus, add a dash of salt to the water, and steam them on medium heat for about 5-10 minutes until they are tender and a rich, green color.
Poaching your eggs - crack 2 eggs in a bowl, making sure both of the yolks do not separate. Heat a few cups of water on medium heat in a wide, non-stick skillet. Once your water has began to simmer (be careful and make sure your water is not too hot and definitely NOT boiling - this will overcook your egg), add 1 tablespoon of white vinegar to the water. Next, slowly pour in your eggs. They will instantly begin to cook and the poaching process should take no more than 5 minutes - make sure you don't overcook them, or else they will come out like hard boiled eggs (out of the shell of course).
Avocado spread - You will only need 1 avocado per sandwich (half on each slice). Cut and peel your avocado and heat it up in the microwave for about 30 seconds, or until it is warm and soft. Then, in a bowl, mash your avocado, add a pinch of salt and pepper, and a little bit of fresh lemon juice on top, and stir your mixture.
Preparing the sandwich - Toast each slice of bread, add your avocado spread, asparagus, sliced tomatoes, poached egg, and whatever other seasonings you may like on top (I used salt, pepper, and basil) and WALAH, your tasty sandwich is complete!
