Roasted peppers stuffed with rice, chicken, and shredded cheese!
What you'll need:
- 4 bell peppers
- 1 1/2 cups of rice
- 2 chicken breasts
- Shredded cheese
- Olive oil
Directions:
First things first, preheat your oven to 400 degrees. Line a thin baking pan with aluminum oil and lightly coat each bell pepper with olive oil. Roast them for about 10 minutes-ish, depending on how "done" you do or don't like them.
Chop your chicken breasts into small, bite sized pieces. Season them with basil, chili powder, lemon pepper, and garlic salt (to taste) and grill on medium heat with a small amount of olive oil until they are fully cooked. Cooking time should take roughly around five minutes.
Next, bring two cups of water to a boil in a pot and a pinch of salt. Add in your rice, turn the stove to low heat, and allow it to simmer for about 15 minutes or until all of the water has fully evaporated.
Now for the fun part! Once your peppers are roasted and all of your “stuffers” are ready, cut off the tops and add in your rice, chicken, cheese, and whatever else you may like! (tomatoes, onions, etc.)
