What you'll need:
- 1 baguette slice
- 1 cup of arugula
- 1/2 of a whole avocado
- 1/2 of a whole tomato
- 2 tbsp. of mozzarella cheese
Directions:
Toast one slice of a baguette. I added a light honey dijon mustard. Make sure you wash your leafy greens thoroughly then add them to the sandwich. Then, top it with your tomatoes, mozzarella, avocado, and a dash of salt pepper!
I had this sandwich with a Naked Juice. They are fruit smoothie drinks but have a relatively high sugar content, so I make sure I drink them in moderation. It's okay to treat yourself every now and then, just make sure you're being reasonable!
