So normally when I make desserts, I try to make them as healthified (word check?) as possible, but I'm guilty for eating wayyyy too many sugary, sinful treats this month. My roommates and I have baked a ton of yummy goodies - pumpkin cheesecake, peach fritters, cupcakes, cookies - UGH, I'm definitely going to need to hit the gym ASAP. But hey, you gotta live a little sometimes! Plus it's my favorite month, so I'll just pretend all of these calories never happened...
Cookie batter ingredients:
- 1 box of vanilla sugar cookie mix
- 1/2 cup of butter (I use Smart Balance non-dairy, olive oil butter)
- 1 tablespoon of vanilla soy milk (optional)
- 1 egg
Toppings:
- Pillsbury Funfetti frosting
- Wilton halloween sprinkles
Directions:
First, preheat your oven to 350 degrees. Soften the butter in the microwave for roughly 10 seconds. Add the cookie mix, softened butter, milk (optional), and egg into a bowl and knead it together until you have a uniform mixture.
Once you have a doughy mixture, knead the cookie dough into small, individual balls. I put a little bit of flour on my counter and re-coat my hands with a few pats before rolling together each ball (this helps prevent sticking). Place the cookie dough balls onto a lightly sprayed, non-stick pan and bake them for about 10 minutes. Cooking time may vary depending on the size you made the cookie dough balls.
Last but not least, the best part - FROSTING AND SPRINKLES! I used Pillsbury Funfetti frosting and Wilton halloween sprinkles. Use a small spatula to spread about 1-2 tablespoons of frosting on each cookie. FInally, add the sprinkles on top and your ready to dig in!
