Happy Saint Patrick's Day! Hooray for my first blog post! It's been so fun watching this site slowly come together and I'm sooo happy that it's just about finished up now!
I love any excuse to get festive so today was certainly no exception! I decided to add a little twist on today's breakfast smoothie to create what I like to call the Shamrock Swirl Smoothie.
Ingredients:
- 1 1/2 cup of spinach
- 1/2 cup of cucumber
- 4 bananas
- 3/4 cup of pineapple
- 2 tablespoons of shredded coconut
- 1 cup of vanilla Greek yogurt (plus an additional few dollops for the clouds)
- 1 Air Heads Extreme strip
- 2 tablespoons of bee pollen
Directions:
For the green smoothie, blend together your spinach, cucumbers, and two whole bananas until smooth. For the white smoothie: blend together two whole bananas, your shredded coconut, and one cup of vanilla Greek yogurt (I used Chobani brand) until smooth.
This will yield a little less than four cups worth of smoothie. I added a little bit of each smoothie to my jar and alternated starting with white, then green, then white, and so on until I had three layers of each. Then I swirled them together using a small spoon.
Next, I added a few large dollops of Greek yogurt "fluffy clouds" on top of the smoothie. For the rainbow, I used an air heads extreme strip and added a tablespoon of bee pollen at the end of each side to serve as large "pots of gold."
