The first day of spring was two days ago but it's still been rather chilly. However, this morning was warm, beautiful, and filled with lots of sunshine. I celebrated with a bright, flavorful smoothie bowl for breakfast!
Smoothie ingredients:
- 1 frozen banana
- 1 cup of pineapple
- 1/2 cup of mangoes
- 2 cups of frozen strawberries
- 3 tablespoons of Vanilla greek yogurt
Toppings:
- Strawberries
- Kiwis
- Chia seeds
- Shredded coconut
- Bee pollen
Directions:
Blend all of your ingredients together and pulse until smooth. Next, pour your smoothie into a bowl. For my toppings, I first started with the strawberries. I arranged them around the perimeter of the bowl, added my kiwis to the center and added a teaspoon of chia seeds on top of them, then sprinkled some shredded coconut and bee pollen on top of the remaining exposed smoothie.
