Happy Sunday, friends! YOU HAVE TO TRY THIS RECIPE ASAP, OKAY?! It's healthy, pretty easy, and frickin delicious. So I was at the gym super late last night and told myself I couldn't eat anything when I got home. So naturally, I fast forwarded to today and started daydreaming (or I guess nightdreaming actually) about what I would have for breakfast. I wanted to come up with a fun, creative recipe and this is where my idea for 'loaded breakfast lettuce wraps' sparked. I went and got the groceries at midnight *hahaha* and was so excited to make it come to life!
Ingredients:
- 3 Romaine lettuce hearts
- 4 oz. of turkey sausage
- 2 eggs
- 1/2 large sweet potato
- 1/2 avocado
- 1/4 red onion
- 1 small tomato
- 2 tablespoons of lime juice
- 1 tablespoon of cilantro
- 1 tablespoon of feta cheese
- 1 tablespoon of roasted garlic salsa
- 1 teaspoon of Smart Balance olive oil dairy-free butter
- Trader Joe's 'Everything but the Bagel' seasoning (to taste)
- Salt (to taste)
- Pepper (to taste)
Directions:
Begin by preheating your oven to 425 degrees. Peel and chop 1/2 sweet potato into bite-sized pieces and toss them in a medium-sized bowl with a little bit of salt and pepper. Once the oven is preheated, bake them for 10 minutes on a baking sheet lined with wax paper. I like mine a little crispy on the outside but perfectly soft on the inside. So next, I transfer them to a covered pan and finish cooking them on medium-high heat on my stovetop.
In a small, non-stick pan on medium-high heat, scramble the turkey sausage until no rawness remains and it is evenly cooked/dark brown throughout.
Next, in a small bowl, whisk together two eggs and add a dash of pepper. Then, in the small, non-stick pan, melt one teaspoon of Smart Balance non-dairy olive oil butter and scramble the eggs on low-medium heat until desired consistency is achieved.
Wash, peel, and chop the lettuce hearts, tomato, cilantro, and red onion (as needed).
Now for the best part - assembling your wraps! Start by placing three of them on a plate. First, add even portions of the sweet potatoes inside of each wrap, followed by scrambled eggs, turkey sausage, tomatoes, and onions. Sprinkle them evenly with cilantro and feta. Next, I garnished them with 1/2 avocado, added a dash of Trader Joe's 'Everything but the Bagel' seasoning, and drizzled 2 tablespoons of fresh lime juice on top. Last but not least, I finished it off with a dollop of roasted garlic salsa (not pictured). Tada - all finished! Now you're ready to dig in!
