The national day of love is almost here, so of courseee I had to fill today's breakfast with lots of hearts! I will admit - I went a little cray today with the heart cookie cutters. I used them for my eggs, tomatoes, even the bread anddd cut out some watermelon with them too. Then I told myself to calm down before I gave myself a HEART-attack (get it... heart attack?) and decided to just add heart-shaped eggs to these sandwiches. They're ohhhh so tasty, healthy, super filling AND the perfect breakfast combo when paired with this colorful fruit platter!
Ingredients:
- 2 slices of whole grain bread
- 1 whole avocado
- 1 tomato
- 2 eggs
- Cracked red pepper
- Juice from 1/4 lemon
Fruit platter:
- Mangoes
- Strawberries
- Blueberries
- Kiwis
Directions:
Begin by toasting two slices of whole wheat, multi-grain bread. Cut one avocado in half and spread it evenly on each slice of toast (1/2 avocado per slice). Add a small handful of spinach, along with two tomato slices, on top of the avocado.
Fry two eggs in a large skillet, making sure to keep the surface area large enough to cut out four hearts once they are cooked. Use cookie cutters to cut out the 'egg hearts' and add them on top of the tomato. Finish it off by adding some cracked red pepper and a squeeze of fresh lemon juice and WALAH - your sandwich is complete!
For the fruit platter, simply cut, peel, and wash the fruit and add it to a pretty plate! The heart-shaped plate is from Hobby Lobby and the 'XOXO' plate is from Michael's.
