Summer is practically here and this greena colada smoothie bowl is a delicious, healthy treat to enjoy in the heat! I call this the 'greena colada' smoothie bowl because the main ingredients are pineapple and coconut - so, you get the satisfaction of having a tasty, frozen smoothie while also getting all of the nutritional benefits from the greens and superfoods included!
Smoothie Ingredients:
- 3 cups of spinach
- 1 cup of frozen pineapple
- 2 bananas
- 1 cup of coconut milk
- 1 tablespoon of fresh lime juice
Toppings:
- Frozen pineapple
- Bannas
- Kiwis
- Shredded coconut
- Bee pollen
Directions:
Begin by preparing your smoothie. Add all of the ingredients to a high-speed food processor or blender and pulse until smooth. It always takes greens such as spinach or kale a longer amount of time to become finely blended due to their "pulpy" consistency. So, add the spinach, coconut milk, and lime juice and blend them together first. Then, proceed to add the frozen pineapple and bananas afterwards. This strategy allows me to not have to blend the frozen items for a long time to compensate for the amount of time it takes to finely blend the spinach and I was able to keep the smoothie thicker and more ice cream-like.
To assemble the smoothie bowl, begin by pouring the smoothie into a bowl. I added a layer of pineapples followed by a layer of bananas, kiwis, shredded coconut, and bee pollen.
