Avocado Toast with the Works

First post of the New Year - woohoo! I hope 2018 is off to a great start for you all and boyyyy have I got an awesome recipe for you to try! So if you're a fan of breakfast or brunch, then you just hit the jackpot with this one. I call this creation 'avocado toast with the works' because this yummy toast has pretty much alllll of the best breakfast sandwich ingredients on it!

Ingredients (yields 2 servings):

- 4 slices of oat nut bread
- 4 tablespoons of cream cheese
- 1 small tomato medley package
- 2 cups of spinach
- 6 slices of bacon
- 4 eggs
- 2 avocados
- Pepper (to taste)
- Basil (to taste)
- Trader Joe's 'Everything but the Bagel' seasoning (to taste)

Directions:

Begin by placing your bacon strips flat in a large pan or skillet, making sure they do not overlap. Then, turn your stovetop on low-medium heat. The bacon strips will soon begin to start cooking and browning. Using tongs, continue to flip over each slice and cook them evenly until you have reached your desired crispiness. Bacon will continue to cook even after you've removed it from the pan, so don't wait too long and end up with bricks!

When the bacon is ready, remove it from the pan with your tongs and place it on a paper towel that is draping a plate to soak up any grease. In a different pan on medium heat, fry each egg separately until cooked to desired doneness. I like to keep the middle of mine slightly over medium, but of course you can cook yours however you'd like! Once all eggs are cooked, set them aside with the bacon.

Toast your four slices of bread and lay them out to begin preparing the open-face sandwiches. Start by spreading one tablespoon of cream cheese evenly on each slice, followed by 1/4 mashed avocado and pepper. Next, add about 1/2 cup of spinach (or ~12 leaves) to each slice, followed by three half slices of bacon. Then, place one fried egg on top, followed by three more avocado slices and a handful of tomato slices. Last but not least, top it off with a dash of the everything bagel seasoning and basil and walah - you're ready to dig in!
