This breakfast combo - man oh man! It's kinda like a breakfast salad since everything lies on top of a bed of spinach. It's super simple to whip up, sooo savory, and your taste buds will surely be thanking you with every single bite you take!
Ingredients:
- Ground turkey sausage
- 2 eggs
- 1/2 avocado
- 1/2 sweet potato
- 1 cup of spinach
- 1 small handful of cherry tomatoes
- 1 teaspoon of Smart Balance non-dairy olive oil butter
- Trader Joe's 'Everything but the Bagel' seasoning
- Salt
- Pepper
- Basil
Directions:
Preheat your oven 425 degrees. Peel and chop a sweet potato into bite-sized pieces and toss them in a medium-sized bowl with olive oil, salt, and pepper. Bake them for 30 minutes on a baking sheet lined with wax paper. Around the 15-minute mark, toss them on the pan to achieve the perfect, evenly-cooked finish.
Using a small heart-shaped cookie cutter, cut out three small hearts of ground turkey sausage. Cook them in a small pan (evenly on each side) with a covered lid until they have browned and cooked entirely through. Drain any excess oil and set the pan aside to use to scramble the eggs.
In a small bowl, whisk together two eggs and add a dash of salt and pepper. Then, in the small pan, melt one teaspoon of Smart Balance non-dairy olive oil butter and scramble the eggs on low-medium heat until desired consistency is achieved.
Next, cut 1/2 of an avocado into equally-sized slices. After that, cut a handful of tomatoes in half.
Begin to prepare the breakfast plate by adding a large handful of spinach to a plate (of course I used a heart-shaped one). Add the turkey sausage hearts, scrambled eggs (with an extra little bit of pepper), avocado (with a dash of 'Everything but the Bagel' seasoning) sweet potatoes, and tomatoes (with a pinch of basil).
