Happy Saint Patrick's day, y'all! Today marks the one-year anniversary of my first blog post - how exciting! For breakfast today, I had a festive rainbow fruit platter and a delicious green smoothie.
Smoothie:
- 2 cups of spinach
- 1 banana
- 2 kiwis
- 1 cup of frozen pineapple
- 1 cup of coconut water
Fruit Platter:
- Strawberries
- Tangerines
- Pineapple
- Kiwi
- Blueberries
Directions:
For the smoothie, simply blend all of the ingredients together and pulse until smooth. For the fruit platter, cut, wash, and peel your fruit and add it to a plate in rainbow color order.
